It's as easy as wee buns
This is really for Laura, go on try it, it's soooo easy.
A few of us have been having baking discussions on other blogs and a couple have had minor disasters with baking sponges.
So I thought I would demonstrate how to bake one.
Remember, you will need 2 X 8 inch lose bottom tins (the bottom comes out) and your oven will need to be at 180C, 350F, Gas 4 or 160 for fan assisted and bake for 25 mins.
Ingredients:
8oz butter
80z caster sugar
4 eggs
80z self raising flour (or plain and a couple of teaspoons of baking powder)
grated rind of 1 lemon
lemon curd
200ml whipping cream
teaspoon icing sugar
7oz icing sugar
juice of 1 lemon (and a little water if needed).
You can't really hear Sharlene from Home Group, but she's saying it's the best thing she's eaten that I've baked. I didn't even have to pay her.

That was brilliant Pauline. I promise I will give it a try. I will buy all the ingredients (I´ll have to buy the tins too - don´t have any - only 1 big springform) but I will try it. You made it look easy....but believe me I have a way of complicating baking. Although my pavlova turned out.

Ok I decided to try and make the cake this evening but put it into bun cases. It actually worked!! and they taste delicious. Thanks Pauline....I am now going to buy some cake tins to try making a cake. I´m starting to get the hang of this - I think!!

Well done Pauline on making a baker out of Laura! Have you ever made your own Lemon curd? It really does beat the bought stuff hands down, and somehow would make your cake even more amazing! Which Nigella Book do you use? When we got married David took over the cooking - well if he wanted to eat Iranian food then he had to cook! Up till then I cooked and baked, but got right out of the way of it, but I realise that I miss - well maybe not baking as making my own deserts for guests, so you guys have all inspired me to start again! (Why should David get all the compliments, I mean spend all day cleaning the house - but who ever comments on that??? They only say "Oh David, this food is fantastic, Rhoda imagine being married to such a good cook!")
Yes Rhoda, get back in the kitchen and making lovely desserts, any recipes you would like to share would be greatly appreciated (especially as your sponge was so good)!
Rhoda, I have made lemon curd, for a lemon meringue pie I made once. I also made cranberry curd, Nigella's recipe again. It was quite easy. I use Nigella Lawson, How to be a Domestic Goddess. Which, of course, I am. I've used loads of the recipes from it. The Christmas cake is really great.
It is really great to bake and make things to eat for people and see them enjoying what you have created. I can't wait until Alice is old enough to do some baking with her.
I agree why should David get all the compliments, go on take control back and do some of that baking/making.
Thanks for the encouragement Lisa, I did used to love baking, and you girls have inspired me again - so I'll leave David to do the cooking, and I'll do the baking . . . maybe!
Pauline - I'll never be a domestic goddess! I am going to make muffins this afternoon - let's see if that gets me back into it! The problem is if they are in the house I will eat them!!!!!!
Its ok Rhoda, eating them is your reward for making them!
As Lisa said, what is wrong with that. If it keeps you happy and isn't a daily occurrance, what's the harm.
Pauline I have now made this receipe 3 times since Friday. I made it as wee buns for Leahs BBQ then I made it as a cake on Sunday, cause my friend was coming over after church. Then last night Andrew tells me it´s his turn to take cake to school for his class. (something they do over here) so I was in a bit of a panic, but I just did your cake receipe and made it into wee buns. So this morning he is away to school with 24 wee buns in his bag....still dont find it relaxing, or enjoyable but at least they turn out. Thanks!!!
My problem is - it would be a daily occurance! I did make the muffins on Sunday, and they were great. then I made the lemon curd again, and remembered why I loved it so much.
Laura, I think enjoying it comes with experience and confidence. You are getting better and that's all that matters at the moment. You are spreading a little bit of joy around the world when you bake and share it. Does that sound cheesey?! Tee hee!!! Good for you for persisting. So glad you are enjoying baking. You can slightly change the recipe. If you want chocolate cake, take out 1oz of flour and replace with 1oz of cocoa powder. Do you have Green and Blacks chocolate in Denmark? If so, their cocoa powder is slightly darker and makes for a great chocolate cake. Don't use drinking chocolate, you won't get the same intensity of flavour.
Rhoda, glad you enjoyed the muffins. I bake low sugar and no salt muffins for Alice, which she loves. They are healthy as well, because they use wholewheat self raising flour and bananas or carrots or raisins, or apples or a combination of the above. She loves them. So do we!!!! Glad you enjoyed the lemon curd, what did you do with it? Did you put it on something or in something?

Discovered that if I just go to Nigella's web page I can get any of her recipes there, don't need to buy the book:-) Also I really like allrecipes.com - they have everything:-)
I just put the lemon curd on bread! (Which I make in the bread maker!!)
Rhoda, yeah forgot about the website. She has these chocolate things (we call them chocolate pots, but she doesn't) which are still gooey in the centre. Yummeeee, with clotted cream. Here's the muffin recipe. They're not really light and fluffy, but are really yummy.
Banana Muffins:
300g Wholemeal Self Raising Flour
115g Butter melted
75g Light Muscovado Sugar
4 large bananas.
2 large eggs.
Oven 375 F or 190 C (I did it on 170 C as we have a fan assisted oven)
Method:
1. Mash bananas with potato masher until quite thin, (mine had a few lumps, not smooth)
2. Add butter and melt (I did in microwave for 2 mins on high).
3. Add sugar and eggs and stir this mixture together.
4. Add flour and stir to combine only, don't over beat.
5. Put into muffin cases.
6. Bake for 10-15 mins and take out when skewer comes out clean.
7. Leave on wire rack to cool. Eat warm.
This makes 24 cupcake size or 12 muffin size.
I have also substituted the banana for carrots, apples or a combination of carrots and raisins and have recently added seeds and cinnamon . Grated two medium sized carrots, needed 3 tablespoons of milk just to make it a bit wetter. They always go down really well.
You girls and your baking!!! You talk about it with such passion that it actually makes me want to bake, then I think about all the mess in the kitchen and think - Nah!! haha (I am a really messy cook and baker haha, there is more flour on the floor and on me by the time I am finished!)
Anyone know what's going on with Laura's blog, I keep getting the messsage that it has been removed? What will I do with my days without Laura's blog. Hope it's just a glitch.
Boy you do learn something new every day - I didn't know you could get wholemeal selfrasing flour! Ok I'll give them a go - but "not tonight Josephine" I'm shattered! Tried to be clever with my blog post last night - failed miserably and ended up not getting to bed till 2.00! But just might go and do it now - after I've checked everybody's blogs of course!
